'Bouchons' are little restaurants in which you can enjoy Lyon specialities including quenelle, Lyonnais salad, tablier de sapeur (breaded tripe), cervelle de canut (soft herbed cheese) and other colourfully named dishes, washed down with a 'pot' of wine.
